Cooking over a hot stove in the middle of the summer does not exactly turn me on. Neither does wasting money. The other day I found a little solution for both that you might enjoy, too.
I was finishing lunch with a friend and looked down at my giganto half-eaten salad. Just as I was thinking about the waste of throwing half of the beautiful salad away, I remembered a trick from a cooking show I saw years ago.
I took the rest of the salad home and tossed it in the blender with a can of chopped tomatoes and a little water. Voila, gazpacho! I seasoned it with some garlic and cilantro and enjoyed it with some crusty bread, Dee-licious!
Cold, tasty and cost effective. Sounds good to me! Well, tastes good to me is more like it.
